[嘉義市]「松築創作和食料理」菜色變化多端卻又能體現新鮮食材自然美味的和食創意料理

七年級的創意與熱誠，讓傳統的懷石料理有了新的思維，突破以往的大膽料理手法，加上定期翻新的美味菜單，一直是嚮往「創作和食」的饕客們，最愛的口袋名單。

餐廳環境

最近小于和大于有幾個在外縣市工作的朋友回嘉義要約聚餐，大于就說機會難得應該來吃間高格調的餐廳過癮一下，跟朋友討論一下最後決定吃這間位於中興路上的「松築創作和食料理」！停車方便、環境舒適、評價頗高、有個別包廂，非常適合我們一群朋友吵吵鬧鬧的聚會XD

一進到店內，櫃台旁就看到精緻的天目，燈飾以竹編打造日式禪風的味道。

繼續往內走，可以發覺老闆對店內的品質非常要求。簡約的擺飾，扣和日式禪風簡約的風格，讓人非常舒心。

店內桌數其實不多，桌與桌的距離，拿捏得舒適寬敞，可以想見老闆注重的並不是人數多寡，而是用餐品質～(也因為桌數不多記得要先訂位唷！)

另外也有另外也有六人座的位置，座椅採用軟式皮椅靠背，很適合長輩們聚餐小酌時久坐。

這次小于和大于是10人以上的聚餐，照片裡小于站的位置還有一桌10人桌唷！加上照片裡的圓桌，以及簾幕後的長桌，這個包廂空間可以容納至少28人

老闆非常鍾愛搜集各式酒類品項，一旁還有酒櫃專門設立來給饕客們選用的酒品專區！喜愛清酒的夥伴，可以在這裡尋找你鍾愛的那款「高級清酒」唷！

小于覺得日本酒的酒瓶造型就像一件藝術品，瓶身腰封的設計充滿酒廠精緻的美感。

洗手間有超級大的鏡面，燈光足夠，很適合小仙女們約會中途來補妝～～有看到左邊的小木盒嗎？那是一人份的洗手液，非常貼心！

（跟各位小仙女說個秘密，女生洗手間有提供棉棉唷～店家真的很貼心！

洗手台也充滿設計巧思，這個小竹斗有故事唷！

這個竹斗叫「逐鹿」，也叫鹿威、驚鹿、添水、僧都（そうず）、驚鳥器。這個裝置最開始的功能是放在農田裡來驚嚇和趕走鳥獸的（與田間稻草人作用同理）。

一坐下來就看到每張桌子都有老闆雷書維先生的感恩小卡，闡述著店家對於「料理」的理念。

菜單

接著就看到了菜單的部分，因為餐廳主打創作料理，可想而知其實菜單會常常有變動，小于這邊就不把菜單都貼上來了，要看詳細的菜單建議到Facebook粉絲專頁的相簿裡面直接看最新菜單唷！(要看菜單點這裡)。

也因為常會有各種創新的菜色，讓小于每一次來都可以享受到廚師精湛又創意的手藝，這邊稍微介紹菜單的類型～

菜單最前面是「極美饌」套餐，一人498元，區分前餚、漁品、溫物、強肴、食事、湯品、甘物，一共7道菜，分別會有5~8樣不等的選擇可以自行排列組合(說起來就是類似西提的點菜方式….)

另外還有蛋奶素的「極風美饌」套餐，一人598元，也是7道菜，不過每道菜色選項就相對比較少了。

多人套餐的部分有以下選擇：

  • 4人套餐「聚 美饌」2,380元 / 多一人加500元 / 8道菜
  • 4人套餐「聚 極上美饌」3,980元 / 多一人加720元 / 8道菜
  • 10人桌菜「沐日美饌」6,000元 / 9道菜
  • 10人桌菜「沐月美饌」8,000元 / 9道菜
  • 10人桌菜「澄心美饌」10,000元/10道菜
  • 10人桌菜「漱石美饌」12,000元/10道菜

雖然有固定的套餐組合，但店家服務非常好，其實也可以跟服務生討論預算還有菜色的搭配唷！

剩下就是單點的部分，區分前餚、刺身、一口入魂壽司、握壽司、揚物、強肴、燒物、味自慢壽司、食事、湯品、鍋物、甘物等12類餐點，從最便宜的「蜂蜜奶油仙草凍(38元)」到最貴的「大盛合握壽司(698元)」就看個人喜好可以點到無上限囉～

久久未見的朋友聚會真的應該要先把菜單看好，難為今天接待我們的服務生看著我們一群吵吵鬧鬧、七嘴八舌的喬不定要吃什麼菜色，但他還是帶著靦腆的笑容超有耐心的幫我們介紹菜單，真的很感謝他XD

用餐

我們十幾個人對菜單一直討論不出個結果，最後請服務生幫我們忽視菜單直接幫我們搭配一組桌菜，其他看個人喜好單點菜色，才算結束了吵鬧的點菜過程，接著就給大家參考一下我們這次聚餐點的菜色囉！

(因為是請服務生另外搭配，有些菜色沒有在單點菜單上面，就沒有標示單價了)

首先上場的是「先付」生鮮干貝\鮭魚卵\海苔燒。

吃的時候，小心的用輕微燒烤過的海苔把上面超鮮甜的干貝和鮭魚卵包裹住，一口氣塞進嘴裡，鮭魚卵在嘴裡爆開！淡淡的鹹味浸潤整個口腔，三種食材的完美搭配，海苔薄脆、鮭魚卵Q彈、干貝厚實，相互交錯的口感讓人整個胃口大開！！

接著是視覺衝擊系列～桌菜的刺身不免俗的就是要用如遊行花車般超浮誇的大盤盛上。生魚片的厚度毫不客氣，份量十足，重點是非常新鮮！

「造里」旬季八品大盛姿造 味付二點盛

下一道海老大蝦搭配生菜沙拉，佐醬的酸甜配合滿滿的鮮蝦真的很可以！！而且蝦殼都已經剝好了唷！！

友人們單點的握壽司～肉質非常新鮮！

「握壽司」和牛、干貝、鮭魚

滿滿一大碗的鮭魚親子炒飯！作為這餐的主要澱粉類角色不負眾望的超級好吃！！

靦腆的服務生有提醒我們要先拌過再吃！把上面的魚卵、海苔和白芝麻拌進炒飯裡面，才能每一口到吃到最完美的味道！

豚寸骨！！！醬燒得鹹香有味，一咬下去就骨肉分離！沾上一旁的胡麻醬之後是意料之外的美味！非常爽口！

大塊的豬肉可以吃得非常豪爽！

鯧魚炊粉雞湯鍋！！！一上桌時其實視覺上頗為衝擊！整鍋滿滿的魚肉(莫名的就聯想到林聰明沙鍋魚頭….)，本來以為會偏油膩的湯頭意外的口感濃郁又不失清爽，以昆布和蔬菜熬煮的湯底超好喝～

不愛吃魚的朋友也不用擔心！魚肉部分有稍微炸過，完全不會有腥味，推薦一定要試試看！小于愛上那個米粉，連吃了三碗！

先炸過的魚肉再經過燉煮，鮮嫩美味！

嚴選軟殼蟹輕揚～～整隻軟殼蟹都可以吃唷！炸得酥酥脆脆，還有蟹黃！軟殼蟹下面有附上甜甜的米果，沾上醬料非常搭唷！

魚肉非常入味，蒸煮過的鱸魚配上一旁的醬汁，雖然看起來顏色很深，但是味道卻意外的在鹹香中帶點清甜，不止完全沒有魚腥還能引出魚肉自然的鮮味，搭配細嫩的口感真是欲罷不能！

握壽司！！！大夥兒使勁加點，最鍾愛的果然還是鮭魚啊！

最後甜品！蜂蜜奶油仙草凍！！！甜而不膩！如果你是正在飲食控制的小仙女，這款甜品你可以放心吃三碗都沒問題！不會太甜～但是蜂蜜跟奶油的量剛剛好可以搭配整碗的仙草凍～

仙草凍屬於綿軟的那一款，跟客家仙草凍的口感不一樣唷！

這次在「松築創作和食料理」的用餐體驗非常愉快！感謝這次的服務生小哥耐心的為我們這群吵鬧的客人耐心搭配餐點及解說～餐廳本身不論是裝潢、氣氛、餐點、服務都是一流！環境方面每個細節都可以看到店主的用心，各式創意的和風餐點也令人驚艷又滿足，料理變化多端但又專注於發揮新鮮食材最原始的風味，重點是作為一間主打創意料理的高級餐廳價格也算相對平價實惠！
